Blackened Salmon Sandwich
My recipe inspirations come from all over the place. My ever growing collection of cookbooks, a meal at a restaurant, a picture I saw of a meal on instagram or pinterest, an idea that just pops into my head, a craving... I love taking bits and bobs of these and adding real ingredients to make them more nourishing and balanced. This sandwich was a happy surprise at a tennis tournament our family attended last summer. We were ravenous and quite frankly, I expected the food there to be standard sports fare...nachos, hot dogs, pretzels. I was shocked to see braised beef tacos, acai bowls, and these salmon sandwiches! I think food tastes all the better when we’re hungry and this hit the spot. I’m already looking forward to another next summer!
Ingredients:
Makes 8 servings
Blackened Salmon
8 wild caught salmon filets
a bit of olive oil or ghee
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoons smoked paprika
1 teaspoons garlic powder
1 teaspoons onion powder
fresh ground pepper to taste
Lemon Garlic Aioli
2 tablespoons mayo
2 tablespoons greek yogurt
zest and juice of 1 lemon
2 garlic cloves, grated
1/4 teaspoon salt
Sandwich Assembly
thinly sliced red onion
greens like butter lettuce or arugula
soft buns like brioche or sourdough, lightly toasted
Directions:
Pat dry your salmon filets and heat a wide skillet over medium heat. Mix the blackened seasonings in a bowl and press onto the salmon filets. Put a bit of olive oil or ghee in the hot pan and place the salmon filets inside. Now, this is important...DO NOT FLIP until a crust has formed on the pan side of the fish. It will create a gorgeously browned and crispy exterior. It should take about 5-6 minutes or so. Flip and cook on the other side in a similar way. If the salmon has skin on, go ahead and remove it. It should peel off easily after cooking. Mix together the aioli ingredients in a small bowl. You’re now ready to assemble your sandwiches. If you like delicious food made even more delicious, go ahead and swipe a little butter on your buns and toast them in a pan heated over low heat. Layer up the sandwich and enjoy!
