Egg Roll in a Bowl
I’m all about a flavorful ground meat served over bone broth rice with some veggies and a sauce. It just makes dinner so simple and leftovers a cinch the next day all while knowing you’re getting a nutrient dense dinner. The glycine in the broth balances out the muscle meat of the ground meat and makes it that much more nourishing. As a family, allowing each person to choose how much sauce and toppings they want gives pickier eaters a bit of autonomy while also holding firm to the boundaries that our bodies need the foundation of a carb and a protein at each meal! I’m not going to pretend that this tastes exactly like an egg roll, but it definitely puts me in mind of one. Honestly, I prefer it this way without the soggy deep fried wonton wrappers!
Ingredients:
Makes 8 servings
1 tablespoon coconut oil
2 pounds ground meat (we used half ground pork and half ground turkey)
3-4 stalks green onions, thinly sliced (white parts and dark part separated)
1 inch knob ginger, finely grated
3 cloves garlic finely grated
1 bag coleslaw mix or one cabbage thinly sliced
1/2 cup coconut aminos
Juice of half an orange
1 tablespoon maple syrup
1 teaspoon toasted sesame oil
Honey Ponzu Sauce
1 tablespoon honey
Zest and juice of half an orange
1/4 cup coconut aminos
Directions:
Heat a wide skillet over medium low heat and warm the coconut oil in the pan. Add the ground meat and break it up with a wooden spoon as it browns. Add to the pan the white slices of green onions, ginger, and garlic and continue to brown. When it’s browned, add the coleslaw mix or finely sliced cabbage (about 4 cups) and let it soften with the meat. Stir regularly and continue to cook for a few minutes. Add the coconut aminos, orange juice, maple syrup, and toasted sesame oil and stir through. Let that cook on low heat another 10 minutes or so to soak up all the yummy juices while you mix the honey ponzu sauce together. If you’re serving with rice, you’ll want to start that before mixing the sauce and it will all be done at the same time! Load your bowls up however you’d like and enjoy!
