Pizzeria Salad
What is a pizzaria salad, you may ask? Well, it’s the one you wish the waiter would place in front of you when you ordered salad at your favorite pizza joint. It’s piled high with some grilled pesto chicken, loaded with salami and mozzarella, full of crisp veggies, and drenched in a tangy, herby vinaigrette. What could be better than that? Serve this up at your next cookout with a big platter of garlic bread and watch your friends and family squeal in delight. This is the salad of our dreams.
Ingredients:
Makes 4 meal sized servings
Herby Vinaigrette:
2 garlic cloves, finely grated
½ cup red wine vinegar
a handful of fresh basil, finely chopped
2 tablespoons fresh oregano, finely chopped
1 teaspoon sugar
½ teaspoon salt
½ cup olive oil
1 tablespoon high quality mayo
Salad:
1 shallot, thinly sliced
about ¼ pound of salami or pepperoni, thinly sliced
1 head romaine lettuce, torn into bite sized pieces
2 handfuls arugula
1 fennel bulb, thinly sliced
1 pint cherry tomatoes, halved
½ cup mini mozzarella balls, halved
½ cup fresh parmesan, shaved thinly
salt and pepper to taste
Directions:
In a large jar, combine all of the vinaigrette ingredients and give it a good shake. Set it aside.
Grab a large bowl and toss all of the salad ingredients together. Just before serving pour half of the vinaigrette over top and give it a good toss until everything is coated. Serve immediately.
