Apple Butter Snacking Cake

The smell of apple butter cooking is one of life’s great pleasures. What is it about the combination of deeply flavored apples, cinnamon, and sugar that just creates magic? I think it’s partly the idea that someone loves you enough to take the time to combine them in a baked good meant to nourish your body and bring you joy! Baking a spontaneous snacking cake is one of my favorite ways to make my family feel a little extra love. They come out of their rooms from quiet time (or from playing outside!) and are met with the welcoming smell of love and apples. Could there be anything better than that?


Ingredients:

Makes 1 8×8 cake

2 eggs

1 cup greek yogurt

¼ cup butter, melted and cooled slightly

½ cup sugar

2 teaspoons vanilla

1 teaspoon cinnamon

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 ½ cups flour

½ cup apple butter


Directions:

Preheat your oven to 350 degrees F. Butter an 8x8 baking dish and line it with a square of parchment if you’d like it to be easy to take out! Set it aside and grab a large mixing bowl. Whisk the eggs, yogurt, butter, sugar, salt and vanilla together until nice and smooth. Sift in the baking powder, baking soda, and flour. Use rubber spatula or wooden spoon to gently fold the dry ingredients into the wet. Scrape the batter into the baking dish and smooth the surface until even. Use a spoon to dollop little spoonfuls of apple butter all over the top. Use a knife to pull the apple butter through the cake in a marbled pattern. Pop the cake in the oven and cook for about 35 minutes. It should be golden on the edges and firm when a finger is gently pressed on the center.
