Ham & Heirloom Tomato Toasties
My first pregnancy was full of confusing cravings, conflicting feelings about my changing body, and the sheer giddy joy of the feeling of a life growing inside my body. Well, all of those were either made better or worse by FOOD. My third trimester was a bit bumpy, we were living in a cold, drafty brick loft downtown while renovating our sweet little cottage and I was READY to nest and get cozy. Since I couldn’t do that in our home yet, I dove into cozy food. My husband made this sandwich for me daily for weeks in a row when I just couldn't get enough of it. I usually could only handle a half sandwich due to the little roommate tucked up under my ribs growing by the day. One bite still takes me back to that lovely, exciting time. Tastes can do that, transport you back to the feeling of a time. It’s nostalgia in a sandwich. Now, we make it for dinner and delight in watching our now ten year old no longer-a-baby scarf it down and wonder at how time goes so fast!
Ingredients:
Makes 1 sandwich
2 slices of hearty sourdough bread
a bit of butter to spread on one side of each piece of bread
1 teaspoon grainy mustard
a few slices of heirloom tomato
3-4 slices of honey maple ham
1 ounce raw cheddar, grated or sliced
Directions:
Heat a wide skillet over medium low heat. Take your slices of bread and spread butter on one side of each. Spread the insides with mustard. Top one side with half the cheese. Layer with the ham and tomato slices. Top with the other half of the cheese and the other piece of bread, butter side up. Place it in the heated skillet and cook until golden on one side. Flip and cook until golden on the other side. Cut in half and enjoy!
