Lemon Butter Fish
Every plate of pasta that goes through our kitchen gets the protein treatment. A giant plate of carbs needs a protein to pull it all together I wanted something light and springy, sausage would be too heavy. It should be something that cooks as quickly as the pot of pasta. Enter a flaky white fish doused in lemon butter! It complements the freshness of the primavera so perfectly and brings the protein count up to match the carbs. Feel free to use whatever fish your family loves here and make it your own.
Ingredients:
Makes 8 servings
8 filets mild white fish like flounder or haddock
4 tablespoons butter
2 lemons
1-2 teaspoons salt
fresh pepper to taste
Directions:
Preheat the oven to 400 degrees F and line a large baking sheet with parchment. Pat the thawed fish filets dry and place them on the baking sheet. Rub the butter evenly over the tops of the fish and sprinkle with salt and pepper. Pop in the oven and cook for about 12 minutes, until the fish flakes easily when a fork is inserted in the middle. Remove from the oven and squeeze the lemon juice over top. Serve with the pesto pasta primavera!
