Puffed Pancake with Saucy Strawberries & Whipped Yogurt Cream
Every once in a while it’s a lovely treat to relish a sweet breakfast. My issue with sweet breakfasts isn’t the sugar itself, but the lack of protein that usually comes with it. This imbalance usually sets us up for a downward slide and ends in an energy crash in the afternoon. This puffed pancake has more protein than the average breakfast treat and the whipped yogurt topping adds even more protein to balance it all out. Did I mention that it can be made with your eyes closed which means dad (or kids!) can whip it up for Mother’s Day no problemo. Wink wink.
Ingredients:
Makes 4 servings
Puffed Pancake:
4 large eggs
1/4 cup sugar
1/2 cup whole milk
2 teaspoons vanilla
a pinch of salt
2/3 cup flour
3 tablespoons butter
Saucy Strawberries
1 cup strawberries, thinly sliced
1 teaspoon sugar
Whipped Yogurt Cream
1/2 cup cream
1/2 cup yogurt
a splash of maple syrup
Directions:
First, combine your sliced strawberries with the sugar in a small bowl and let them sit and get saucy while you do the rest! Preheat your oven to 425 degrees F. While it’s preheating, go ahead and make the whipped yogurt. First whip the cream to soft peaks, it's almost a stiff whip cream, but not quite! Add the yogurt and maple syrup and keep whipping until it is a soft whipped cream consistency. Pop it in the fridge. Now let’s make that pancake! In a large bowl, whisk the eggs and sugar until light yellow in color. Add the milk, vanilla, and pinch of salt and keep whisking. Your arm is getting a workout! Add the flour and keep that whisking going until it’s super smooth with a a few lumps here and there. Let that sit for a minute while you pop an oven safe 8-10 inch skillet in the oven with the butter in it. Let it melt and get a bit foamy. Take the pan back out and pour the batter in and immediately return it to the oven. Let it cook for about 15-20 minutes, until the edges are golden and it’s nice and puffy! Make sure you watch it because it’s so fun to watch it puff up like a balloon! Take it out of the oven and serve it immediately. It will start to deflate right away and that’s ok! It still tastes great! Serve with the strawberries and cream and enjoy.
