Butter Lettuce Salad
Butter lettuce is my favorite of all the lettuces, except maybe arugula. Butter lettuce is completely lacking in bitterness and toughness, and has a soft quality that pairs so nicely with a brash and tangy dressing. This simple salad graces the table all spring and summer long as a way to brighten up whatever our meaty main dish is. I hope you love it.
Ingredients:
Makes 8 servings
1 shallot, finely minced
1/2 teaspoon salt
2 tablespoons red wine vinegar
1/2 teaspoon dried Italian seasoning
2 teaspoons dijon mustard
1/4 cup olive oil
1 large head butter or bibb lettuce, torn into pieces
Directions:
In a large bowl, combine all ingredients except the lettuce. Just before serving, toss the lettuce through and coat the leaves with the dressing. Serve immediately and enjoy!
