Pulled Beef Sandwiches with Peppers & Chimichurri
Picking favorite recipes in each issue of Simple Seasons feels nearly impossible. It really depends on my mood! Are we talking sweet treats or meals? These truly are the recipes we cook and eat as a family over and over. There are two or three from each issue that make it into our family hall of fame which means every single family member could happily eat it once a month for the next ten years and be quite happy. This is one of those recipes! I love how simple it is to cook; I can throw the roast in the instant pot around lunch time and slice and sauté the peppers and onions just before dinner time. While the sandwiches are getting a quick broil I may toss together a quick salad and slice some fruit for sides or maybe not! This is an easy button dinner after all...
Ingredients:
Makes 8 servings
Pulled Beef:
2 pounds chuck roast
1 tablespoon butter
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon salt
1 cup water or broth (3 cups if you’re cooking in the slow cooker)
Sauteed Peppers:
1 tablespoon butter
2 bell peppers, thinly sliced
1 red onion, thinly sliced
salt to taste
Chimichurri:
1 cup cilantro or parsley or a mix
2 cloved garlic
juice from 2 limes
pinch of red pepper flakes
2 tablespoons olive oil
To assemble:
8 buns or rolls
4 ounces mozarella cheese
Directions:
In a slow cooker or instant pot, melt the butter and place the chuck roast on top. Sprinkle the seasonings over top. In the instant pot, cook on high pressure for 2 hours. In the slow cooker, you’ll want to do low heat for at least 8 hours or high heat for 4-6 hours.When it’s done cooking use two forks and shred the meat apart, removing any chunks of fat or gristle . Just before you’re ready to eat, heat a pan over medium heat and melt the butter. Add the peppers and onions with a pinch of salt and soften until they are just starting to caramelize. While those are getting delicious, blend all of the chimichurri ingredients in your blender until smooth. Time to assemble the sandwiches! Grab a heat proof pan of some sort to build your sandwiches on that can go under your oven broiler. Take a bun and spread a bit of chimmichuri. Pile on some of the shredded beef and lay a slice of mozzarella over top. Repeat until you have the bottom of all your sandwiches complete. Broil them just until the cheese starts bubbling, but keep a close eye on them! You don’t want to burn these babies! When they are ready, pop the top bun on with another drizzle of chimmichuri and enjoy!
