Chicken Quesadilla with Honey Lime Chipotle Sauce
Quesadillas are always a winner of a dinner in our house! What I love most is that they are endlessly riff-able and can suit the many tastes found at a family dinner table. I personally like mine loaded with chicken, sautéed peppers and onions. While the younger members of the family prefer a higher cheese to chicken ratio. The dipping sauce brings it to the next level of low effort/high impact and adds even more flavor (and protein) to the plate! This chicken cooking method has become my favorite simple way to prep chicken for soup (like the chicken chili above!) or mixing in something else. Feel free to steal the method and switch up the seasonings depending on what you’ve got on the menu this week. Remember, this is your kitchen and your table, have fun making it your own!
Ingredients:
1 pound boneless, skinless
chicken breasts
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon salt
For quesadillas:
optional, sauteed bell peppers and onions
1 ounce cheese per quesadilla
8 large burrito tortillas or 16 small tortillas
Honey Lime Chipotle Sauce:
½ cup yogurt
1 teaspoon honey
juice of 1 lime
½ teaspoon salt
chipotle powder or hot sauce to taste
Directions:
Preheat your oven to 425 degrees F and line a baking sheet with parchment paper. Season the chicken breasts with olive oil, cumin, garlic powder, smoked paprika, and salt (or you can use your favorite taco seasoning!). Pop the chicken on the baking sheet in an even layer and roast for about 18 minutes. Take them out and let rest for about 5 minutes before dicing into bite sized pieces. While the chicken is cooking, you can saute any veggies that you might want to add in to your quesadillas. Get your quesadilla making station set up, your tortillas, grated cheese, and any fillings. You can cook these in the oven if you can’t bear the thought of flipping quesadillas, but I really do prefer them cooked in a pan on the stove. If you want to do the oven, layer some cheese on a tortilla, then the fillings, then a bit more cheese and another tortilla on top. Place it on the baking sheet and pop in the oven until the cheese is nice and melty. If you want to use the stovetop, you’ll do the same process but cook in a pan oven medium heat, flipping it when golden on the first side. While the quesadillas are cooking, whip up your honey lime chipotle sauce by mixing all the ingredients in a small bowl! Cut the quesadillas into triangles and serve!
