Chorizo Breakfast Taco

As far as savory breakfasts go, there are few that I like better than a taco stuffed with eggs, bacon, cheese, greens and salsa. The problem I always run into is that while bacon is a delicious addition, it doesn’t add as much protein as I’d like. I usually aim for 30 grams of protein in my breakfasts. I find that my blood sugar is more stable throughout the day if i’m getting about 30 grams of protein per meal, the hangry feelings are nonexistent and the afternoon slump never visits. I know, it seems to good to be true but it works for me! I decided to make a batch of ground turkey with chorizo flavors one day to add to my breakfast taco and BOOM, my low protein breakfast taco was fixed. The real surprise was how delicious it was... the chorizo flavors carried the taco and I found myself craving it! This works just as well as a “breakfast for dinner” meal.


Ingredients:

Makes 8 servings

Chorizo:

1 tablespoon butter

1 pound of ground turkey (pork or beef would work well here!)

½ teaspoon salt

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon garlic powder

¼ teaspoon onion powder

½ teaspoon dried oregano

a pinch of chili powder if you like heat (we leave it out for the kiddos)

Breakfast Taco Assembly:

tortillas

scrambled eggs

grated cheese

salsa

greens


Directions:

In a wide skillet, melt the butter over medium heat. Add the ground turkey and let it brown. Use a wooden spoon to break up the meat into little bits as it browns. When it’s browned, add a splash of water and the seasonings. Stir well and let the water reduce while the seasoning soaks into the meat. If you’re making the breakfast tacos now, scramble 1 egg per 2 tacos, and set out the other toppings. Warm a tortilla and assemble your dream scenario. Enjoy!
