Italian Chicken
This chicken is one I make weekly without fail. It reminds me of the grilled chicken marinated in Italian Dressing that was present at every cookout I attended as a kid. I promise it will be one for the family favorites list and you’ll be making it with your eyes closed!
Ingredients:
Makes 8 servings
2 pounds chicken breast
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon italian seasoning
1 teaspoon garlic powder
1 teaspoon salt
Directions:
Up to 24 hours before cooking, combine the italian chicken ingredients in a bowl or large ziploc bag. If it will be more than an hour until you cook it, pop it in the fridge. Heat a wide skillet over medium heat. Add a drizzle of olive oil. Place the chicken in the pan and let it cook for about 6 minutes uncovered without moving it. This creates a nice crust. Flip the chicken and cook for another 4 minutes on the other side uncovered. At this point add a lid and turn the heat to low and let cook for another 8 minutes covered. This is my foolproof method for cooking chicken breasts perfectly! You may need to add a bit of time if your chicken breasts are very thick.
