Sugar Cookie Bars
Do you ever have the realization that to actually be the person you want to be, you have to actually do the things that person would do? For example, I’ve always imagined that I would be the mom that had homemade cookies ready for an afternoon snack in a tupperware or cookie jar, but I found myself scrounging the pantry for an afternoon snack every day instead. It finally dawned on me that I ACTUALLY HAVE TO BAKE THE COOKIES to have cookies to offer them. It sounds so obvious, but it can be so hard to see through the fog of the expectations, the to do lists, the interruptions and really hone in on what do I need to do to BE the person I want to be. For me? It’s baking homemade cookies (or cookie bars when I don’t feel like chilling dough and rolling balls ;) every few days so I can be the mom who says, “there are cookies in the cookie jar and milk in the fridge, love” when my kids are looking for a treat in the afternoon. These take literally 10 minutes to get in the oven and never fail to delight my kids.
Ingredients:
Makes one 8×8 pan
½ cup butter, melted
¼ cup greek yogurt or skyr (regular yogurt won’t work here because it’s too runny)
1 cup sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon almond extract
pinch of salt
pinch of baking powder
1 ½ cups flour
Sprinkles of choice for topping (our favorites are these and these)
Directions:
Preheat oven to 350 degrees F. Rub an 8x8 pan with butter and line with parchment paper. In a large bowl, whisk together the melted butter, yogurt, and sugar until smooth. Add the egg, vanilla and almond extract and keep whisking! Add the salt, baking powder, and flour and stir once more until combined. Scrape into the lined baking dish and sprinkle the sprinkles over top. Pop them in the oven for about 25 minutes, until just golden. Let them cool for at least 20 minutes before attempting to remove from the pan and cut into squares. Enjoy!
