Salted Crispy Peanut Butter Cups

Why is it that peanut butter cups and fall are synonymous in my mind? It’s probably because my insatiable chocolate PB cravings were anticipating the halloween haul of reese’s cups long before the night arrived. Well, now I’m an adult and I can buy peanut butter cups whenever I want! The hilarious thing is that one bite of a storebought peanut butter cup never tastes like what I remember. I want the perfect mix of salty and sweet, I want the snap of chocolate, the smooth peanut butter filling, and strangely, a little crunch from rice cereal completes the perfect combination. My kids adore these and because the ingredients are as wholesome as can be, they double as an afternoon snack if you’d like the title of “World’s Greatest Mom.” It’s pretty fun to be the adult now :)


Ingredients:

1 cup peanut butter (my favorite!)

½ cup maple syrup

2 scoops collagen (totally optional but adds a bit of texture and protein, I buy Perfect Supplementswith code JMW10 ;)

1 cup puffed rice cereal (my favorite is One Degree Organics!)

1 cup chocolate for melting (I love these discs, but also use these chocolate chips)

flaky sea salt for topping

mini muffin liners


Directions:

These couldn’t be simpler. First, melt your chocolate. You can make a double boiler by placing a larger bowl over a small pot of water. Just put the chocolate in the bowl and bring the water to a simmer. The steam rising to the bottom of the bowl will will melt the chocolate. You can also just use a microwave 😉 While that’s melting. Mix all of the ingredients (besides the chocolate and flaky salt) in a medium bowl. It should be a soft, yet firm mixture. Scoop little bits of the mixture and press it into the muffin liner. Just leave enough room on top to pour a bit of chocolate in. Once you have all of the muffin liners filled, use a spoon to pour a bit of melted chocolate over the peanut butter mixture. Sprinkle with a bit of salt and pop in the fridge to harden. They’re best stored in the fridge and are delicious cold! Enjoy!
