BBQ Meatballs
Meatballs are a go-to meal in our house. They double easily, require one bowl to dirty, mix and bake in a snap, and can take on so many different flavor profiles that we never get bored. Did I mention they are relatively inexpensive to make for the amount of high quality protein they have? It’s a win all around. These BBQ meatballs aren’t blowing anyone’s mind in the creativity department, but they are super delicious and the BBQ flavors go perfectly with summer time meals!
Ingredients:
1 pound ground beef
1 pound ground pork
1/4 cup bread crumbs
1 egg
1/4 cup barbecue sauce
(our 100% favorite BBQ sauce)
1 teaspoon salt
another 1/4 cup BBQ sauce for topping
Directions:
Preheat your oven to 400 degrees F. Line a large baking sheet with parchment paper and set aside. In a large bowl, whisk the egg. Add the breadcrumbs, salt, and barbecue sauce and mix well. Add the meat and use your hands to incorporate the mixture evenly. Scoop about a tablespoon of meatball mixture and roll into a golf ball shape. Place on the parchment and continue until the mixture is gone. Spoon a bit of barbecue sauce over each meatball. Put in the oven and bake for about 25-30 minutes until cooked through. Enjoy!
