Strawberry Honey Lemonade
If summer came in a glass, this would be it. I was never a big lemonade fan until I started making it at home. If I’m honest, I can be a bit of a lazy chef... the squeezing of so many lemons was enough to temper my enthusiasm for making a pitcher of homemade lemonade. One summer I had an overflow of farm fresh strawberries that were a little too smushy for eating out of hand and I dreamt of making a tongue tingling lemonade out of them. I tossed everything in the blender, with honey instead of simple syrup because it is like nature’s simple syrup and voila my lemonade world was forever changed. The honey lends such a depth of flavor that goes beyond what sugar can give, but if you don’t like the stronger flavor you can sub for sugar!
Ingredients:
4 lemons
1 pound strawberries
1/3 cup honey
2 cups water
sparkling mineral water and ice for serving
Directions:
Cut the skin, including outer white pith, off your lemons. Don’t worry about the seeds! Cut the tops off your strawberries. Blend the lemons, strawberries, honey, and two cups of water until pureed. Pour through a mesh strainer. What you have now is basically a concentrate with a VERY vibrant flavor! Pour over ice to fill a cup about halfway and finish with as much sparkling water as you’d like to suit your tastes. Enjoy in the sunshine!
