Old Fashioned Vanilla Ice Cream

Classic vanilla ice cream and summertime will always go hand in hand for me. Every 4th of July, my wonderful grandpa would dig out the hand cranked ice cream maker and let the grandkids take turns cranking it for an hour (there were about 40 of us, so we didn’t work too hard!). The flavor was always vanilla and it was the most vanilla-y and delicious ice cream I’d ever tasted. I don’t know if it was the patience required or the work we had to do to make it, but it just tasted better. Now, I have an electric ice cream maker so I don’t have to stand and turn the crank for an hour. The ice cream still tastes like the best I’ve ever had so I’m thinking maybe it just is.

Ingredients:

1 cup heavy cream

2 cups whole milk

2 egg yolks

2 scoops collagen

teensy pinch of salt

1 cup sugar

1/4 teaspoon vanilla powder

(can sub for 1 teaspoon vanilla extract, but I highly recommend investing in vanilla powder!)

Directions:

In a high speed blender, mix all of the ingredients until light and frothy. Pour into the bowl of an ice cream maker and churn until soft serve consistency. You should definitely eat a bowl right away and pour the rest into a glass tupperware container (we use these) and store in the freezer. It will still be scoopable and soft straight from the freezer!
