Banana Oat Breakfast Bars
Summer is nearly here and the sun is up early which means kiddos are up and at ‘em with the sun ready to eat! We are big fans of the “sunrise snack” in our house. We have some early risers and some late sleepers which means some of us have to wait a couple of hours for a big family breakfast. A sunrise snack is a balanced little bite that tides us early risers over until the main event. The breakfast bars pair perfectly with a glass of milk and take zero prep at all once they’re made. They are sturdy enough to make a stellar snack on the go with a beef stick to up the protein. They are delicious and heaps cheaper than buying snack bars at the store!
Ingredients:
3 ripe bananas
1 teaspoon vanilla
1/4 cup melted coconut oil or butter
2 eggs
2 scoops collagen (optional but adds protein!)
1/2 cup coconut sugar
1 teaspoon cinnamon
1 teaspoon baking powder
1 1/2 cup cups rolled oats
(I use these sprouted oats!)
1/2 cup rolled oats, blended into a fine flour in the blender
1/2 cup flour (any type works well)
pinch of salt
1/2 cup chocolate chips
Directions:
Line a 9x13 dish with parchment. I like to tear a piece to fit and then crumple it up in to a ball then flatten it out and press it into the dish. This helps it conform to the edges more easily. Preheat your oven to 350 degrees F. In a large bowl, mash up the bananas with the back of a fork. Whisk in the vanilla, melted oil or butter, eggs, sugar, and collagen. Once well mixed, add the rest of the dry ingredients besides the chocolate chips and stir until combined. Pour the mixture into the baking dish and sprinkle the chocolate chips on top. Bake for about 20-25 minutes. The edges will be slightly browned and the center will be firm to a light touch. The secret is that these need to be cooled to at least room temperature before slicing and eating! They need that chance to cool in order to be sturdy enough to be a handheld snack. We store them in the fridge to keep them and can easily pack them to go for a few hours without being refrigerated. Here's to happy sunny mornings!
