Tomato & Peach Salad
This salad is a classic case of ingredient driven cooking. The measurements are from the heart and the flavor is entirely dependent on the quality of your produce. This is a dish best made after a visit to the farmer’s market when the produce is at peak ripeness, the smells tempting you to bite right in. The juices combine with the oil and vinegar to create a dressing that couldn’t be recreated any other way. Ingredients:
heirloom tomatoes, cut into wedges
ripe peaches, cut into wedges
fresh basil leaves
flaky sea salt and fresh black pepper
fresh mozzarella, torn into bite sized pieces
balsamic vinegar
olive oil
Directions:
Arrange the tomato and peach slices on the plate. Plop the mozzarella among them and drizzle the balsamic and olive oil over top. Place the basil leaves on top and sprinkle with sea salt and a bit of pepper. Enjoy!
