Herbed Rice

This recipe is a riff on my classic bone broth rice. It still has the extra nourishment and flavor from the chicken broth, but I’ve taken it up a step with herbs. Not only does it add color and flavor, but herbs are like natures multivitamins! They are full of water soluble vitamins and minerals and antioxidants. I love when good health is this easy and enjoyable.


Ingredients:

1 cup basmati rice

1 cup water

1 cup chicken stock

1/2 teaspoon salt

1 tablespoon butter

1/4 cup soft herbs, finely chopped (parsley, mint, cilantro, or basil would all work great here)


Directions:

In a saucepan, combine the rice, water, chicken stock and salt. Put the lid on and bring to a boil. Once it starts to boil turn the heat all the way down, as low as it can go and leave the lid on to trap the steam. Let it sit for about 15-20 minutes until done (it’s flexible). Take of the lid and fluff the rice with a fork. Add the butter and chopped herbs and stir through gently. Serve immediately and enjoy!
