Garlic & Herb Potatoes
You can’t go wrong with a garlicky-herby side to almost any meat main. I always keep potatoes, garlic, and a random assortment of herbs in my pantry which means this is on the menu often. It could be worse!
Makes 4 servings
1 pound baby potatoes, sliced thinly
1 tablespoon olive oil or butter
2 garlic cloves, finely diced
1 handful of chopped parsley
1 teaspoon salt
Directions:
Get the potatoes ready, cleaned and thinly sliced. They will take about 20 minutes to cook (again, mostly hands off) so plan accordingly with the rest of your meal so you can eat it all hot at the same time! Heat a wide skillet over medium heat. Add the olive oil and toss the diced potatoes in. Let them cook and form a crust on the first side. Give them a stir and let that side get a bit browned. Finally, add the garlic, parsley, and salt and give it a good toss. Let them cook another few minutes or so.
