Korean Beef Bowls

We all have those weeknight recipe heroes that can be thrown together blessedly quickly and everyone in the family loves it, right? Well, this is ours and if you don’t have one of those heroes yourself I will share! We eat this meal at least once or twice a month without fail. We seem to always have some ground beef thawed out and usually some cabbage languishing in the fridge. Add some pantry staples and dinner is almost ready.


Ingredients:

1 pound ground beef

1/2 teaspoon salt

1/4 cup coconut sugar

1/4 cup coconut aminos

1 teaspoon toasted sesame oil

1 teaspoon freshly grated ginger or 1/2 teaspoon ground ginger

1 garlic clove, grated or finely chopped

Pinch of red pepper flakes (omit if sensitive eaters!)

green onions

gomasio (seeweed & sesame)

kimchi

sriracha

cashews


Directions:

In a wide skillet, brown the ground beef over medium high heat. If it is fairly fatty, you won’t need to add any fat to the pan. Sprinkle the salt on top as it browns. Break the clumps up into smaller pieces with a wooden spoon while it browns. While its cooking mix the remaining ingredients together in a bowl. Once the beef is nice and browned pour the sauce over top. Stir through and let cook for another few minutes. It should be lovely and caramelized. Enjoy over rice with the caramelized cabbage and chosen toppings.
