Caramelized Cabbage
This cabbage dish sounds incredibly simplistic and boring. That couldn’t be further from the truth. Cooking the thinly sliced cabbage slowly in butter caramelizes the sugars found in the under-appreciated veg and transforms it into a sweet savory delight. The cooking process breaks down some of the hard to digest fibers and makes it more digestible and (because of that) more nutritious! Delicious.
Ingredients:
about 1/2 medium sized green cabbage, very thinly sliced
2 tablespoons butter
1/2 teaspoon salt
a splash of rice vinegar
Directions:
In a large skillet, over medium heat, melt the butter. Add the mound of thinly sliced cabbage, it will cook down quite a bit so don’t be intimidated by the amount! Sprinkle the salt over top and stir it every few minutes while it cooks and breaks down. You don’t want to burn the butter so keep an eye on it. It will take about 15 minutes for it to get nice and caramelized. There will be some brown bits stuck to the bottom of the pan. Add the splash of vinegar and scrape those tasty bits off the bottom with your wooden spoon. Stir the cabbage to mix it through. Enjoy the magic of letting heat and time transform something ho-hum into something irresistible.
