Chocolate Chip Scones
There are few things cozier than a warm scone with a cup of tea or latte. I think this is why we all romanticize the ideal coffee shop scenario. The golden scent of butter, sugar, and flour melding in the oven, the soothing sounds of steamed milk and the sight of coffee pouring, the twinkling lights and cocoon like decor of our favorite coffee shops. Well, let’s be real, when you have kids in tow this ideal coffee shop scenario is never as relaxing as we expect and the bill afterwards can make your eyes water, so let’s make those scones at home instead!
Ingredients:
2 ½ cups all purpose flour
(I use all purpose einkorn flour, but you can use what you have!)
a pinch of salt
1/2 cup sugar
1 tablespoon baking powder
½ cup cold butter, grated or cubed
1 cup dark chocolate chips
1 egg
1/3 cup greek yogurt
1/3 cup whole milk
½ teaspoon vanilla extract
Directions:
Preheat your oven to 400 degrees F. Line a large baking sheet with parchment paper and set aside. In a large bowl, toss the flour, salt, sugar, and baking powder together until combined. Add the cold grated or cubed butter and use a fork to stir together. Use your hands to rub the butter and flour together until the butter is the size of almonds or peas. Stir in the chocolate chips. Pop that bowl in the fridge. Grab another smaller bowl and whisk the egg. Add the greek yogurt, milk, and vanilla extract and whisk well. Take the flour-butter mixture out of the fridge and pour the egg mixture in. Use a wooden spoon to gently stir together to form a rough dough. You may need to knead it together a few times against the side of the bowl to get it to stick together. It’s supposed to feel quite dry so don’t worry! Place it on a floured surface and fold it onto itself. Pat it into a rectangle and fold it onto itself again. Repeat once more and flatten into a circle about 8-10 inches in diameter. It should hold together much better at this point as the flour is soaking in the liquids. Use a large knife to cut the circle in half, then halve those halves, and then again. You should have 8 wedges of scone dough. Place them on the lined baking sheet about 1 inch apart from each other. Bake for about 20-25 minutes. Keep your eye on them and pull them out when they are just starting to get golden! Enjoy!
