Garlic Bathed Broccolini

The quickest cooking side in all the land, a steam sauteed veg! My favorite is broccolini with TONS of garlic. Even the kids will try a bite ;)


Ingredients:

2 heads broccolini, tough ends trimmed and the rest cut into bite sized pieces

6 cloves garlic, finely grated

2 tablespoons butter

salt to taste

¼ cup of water


Directions:

Broccolini cooks so quickly so save that for last! Grab a wide skillet and pop the chopped broccolini in the pan. Pour the water over top and sprinkle the grated garlic, salt, and peices of butter over top. Put the lid on and bring it to a simmer. You will see steam coming out of the sides of the pot, that’s good! Let them steam for about 5 minutes, we’re going for crisp-tender, not mush! Take the lid off and let the water reduce. The garlic will infuse into the broccolini and butter as the water evaporates. As the water reduces, you’ll need to toss the broccolini every minute or so to avoid sticking or burning. It should only take another few minutes of cooking to be done!
