Cinnamon & Brown Sugar Cookies
If you grew up in the 90's I’m sure you recognize this flavor pairing well. A certain packaged breakfast treat (ahem, pop tarts) combined the magic of brown sugar and cinnamon and squeezed it between two cardboard tasting sheets of pastry. It was always my top choice to put in the shopping cart when I got to pick (as the one of the youngest and therefor perennial grocery shopping partner to my mom it happened frequently). Now, I know that those boxed pastries are completely devoid of nutrition and taste eerily similar to the cardboard box they come in. Luckily, I can whip these cookies up in no time flat and revel in the flavor pairing once more while resting in the knowledge that my body is being nourished as well as my soul. Being an adult is pretty cool sometimes.
Ingredients:
1 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, melted
3/4 cup dark brown sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon cinnamon
Directions:
Melt the butter and let it cool slightly while you gather the rest of your ingredients. In a large bowl mix the slightly cooled butter with the brown sugar. Keep whisking until it is nice and fluffy and paler in color than when you started. Add the eggs and mix with the sugar using a whisk until little frothy bubbles appear on top. Add your vanilla, cinnamon and salt and keep mixing. Sift your flour with the baking powder to get rid of any lumps. Add to the wet ingredients and mix together well. If you can wait, pop the bowl in the fridge for an hour or so. Of course, you can leave it for longer too! When you are ready to bake, preheat the oven to 350 degrees F. Line a baking sheet or two with parchment paper. Scoop about a tablespoon of dough and roll it into a golf ball size and place them about two inches apart so they have room to spread. You should get about 18-20 cookies. Bake for about 13 minutes. The edges will just be set. Let them cool for a bit on the tray before moving them. They set up more as they cool!
