Apple & Sage Breakfast Sausage

We make a double or triple batch of these sausages every other week and they never fail to disappear from the breakfast table. We have a few store bought breakfast sausages that we use in a pinch, but truly, they don’t hold a candle to these. They are a cinch to make and freeze like a dream. What are you waiting for?!


Ingredients:

2 pounds ground sausage or pork

3 sage leaves, finely chopped

1 teaspoon salt

1 tablespoon coconut sugar

1 apple, grated


Directions:

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. In a large bowl grate the apple on a box grater. Add the chopped sage, salt, coconut sugar, and pork. Using your hands, mix the apple into the meat until evenly incorporated. Using a cookie scoop or a spoon, make even balls of the sausage mixture and place onto the baking sheet. Use your palm to flatten the balls slightly. Leave a bit of space between the patties so they can cook evenly. Put them in the oven and bake for about 25 minutes until nicely browned. You can eat them right away or store them in an airtight container in the fridge for a few days or the freezer for a month or two!
