Creamy Tortilla Soup
We often seem to find ourselves with leftover chicken from a Sunday roast that isn’t quite enough to make a meal on it’s own. You may find yourself in a similar predicament the weekend after Thanksgiving after you’ve had more plates of leftover turkey than you can handle. In the blink of an eye you can turn it into this slightly spicy, creamy, and bright soup that is the antidote for the post Thanksgiving slump.
Ingredients:
1 sweet onion, diced
3 garlic cloves, sliced
2 bell peppers, diced
1 cup frozen corn kernels
1 can white beans
1 18 oz. jar diced tomatoes
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon adobo seasoning
Dash of chipotle powder
6-8 cups of chicken broth
2 raw chicken breasts or leftover chicken or turkey
½-1 cup heavy cream or coconut milk
Raw cheese, greek yogurt, cilantro, avocado for topping
Directions:
Place a large pot or dutch oven over medium low heat and put a bit of butter in to melt. While that’s going, chop your veggies. Start with your onion and add it as soon as you’re done chopping. Sprinkle a bit of salt over and let it cook down while you cut the garlic. Add it to the pot with another sprinkle of salt. Do the same with the bell pepper. Let the veggies all mellow in the pot for a bit and become beautifully translucent and a bit caramelized. Add your corn, beans, meat, jarred tomatoes, cumin, adobo, and chipotle powder (go easy on this one if you have sensitive eaters!). Give it a stir and add the broth. You’ll want it to be quite brothy so just use your judgement with how much to add. It will reduce a bit as it cooks so keep that in mind. Bring the soup to a simmer and taste the broth. Add a bit more salt or seasoning if it needs it. Cover with a lid and let it simmer for a bit to combine the flavors and soften the veggies a bit more. If you used raw chicken breasts you’ll need to simmer it for about 30 minutes before tasting, then remove the breasts and chop them before adding back in. Before serving, add the cream or coconut milk and stir through. Don’t forget the toppings!
