Harvest Sausage Breakfast Hash
I love whipping this hash up on a weekend to have on hand for all types of meals during the busier week days. I always seem to have a glut of vegetables from overzealous market shopping that works well in a hash. Use whatever you have on hand and you’ve got a protein and veggie combo to make nachos, top pizza, add to breakfast tacos, eat with roasted potatoes, or over rice!
Ingredients:
1 pound pastured breakfast sausage or ground pork (you can even do this with ground beef!)
1 bell pepper, diced
1 red onion, diced
1 bunch of kale, chopped small
Dash of red pepper
flakes and fennel seed
Salt and pepper to taste
Directions:
Add the ground meat to the pan and cook it until its browned. Use the wooden spoon to break it into small pieces as it cooks. If the meat is lean, you may need to add a bit of butter to the pan before hand.
Once the meat is browned add the pepper and onion and saute until caramelized. Add the kale, pepper flakes and fennel and stir until the kale wilts.
Add salt and pepper to taste.
