Chicken Croquettes

I definitely “fancied” the name up on this one a bit. I could have called them chicken patties or grown up chicken nuggets, but croquettes has such a graceful ring to it. Really, croquettes are just a mixture of ground meat, seasonings, and breadcrumbs held together with a bit of egg and then pan fried on each side to crispy deliciousness. I’m not in the habit of standing at the stove for an hour pan frying dinner on a Tuesday night, so I found a way to get that same crisp outside using the oven! Bonus points for using SO much less oil! Feel free to mix up the seasonings and herbs you use, this is a very neutral (but tasty) version that is beloved by our household.


Ingredients:

Makes 8 servings

2 pounds ground chicken (you could also use ground turkey)

1 onion, grated

4 cloves garlic, finely grated

a handful of parsley, finely chopped

2/3 cup breadcrumbs

(I make ours from stale baked sourdough bread blended in the blender!)

2 eggs

2 teaspoons salt

1 teaspoon of garlic powder

fresh pepper to taste

Breadcrumb coating:

2 teaspoons of paprika (I love using smoked paprika!)

1 ½  cups breadcrumbs

1/2 cup grated parmesan

1/2 teaspoon flaky salt

fresh ground pepper to taste

Olive oil for drizzling over top before baking

(I use and love this spray bottle for coating things in olive oil before cooking!)


Directions:

Preheat your oven to 425 degrees and grab a baking sheet. You’re not going to line it parchment paper this time, I know, I’m as surprised as you are! You’re going to rub the tray with a bit of olive oil. I like to use this spray bottle and fill it with olive oil! Set aside while you mix up the croquette mixture.

In a large bowl, whisk the eggs together. Add the grated onion, grated garlic, chopped parsley, salt, garlic powder, and pepper. Give it a good stir. Add the breadcrumbs and let them soak into the mixture. Now, add the ground chicken and use a wooden spoon or fork to mix the breadcrumb mixture through the meat until it’s one uniform mixture.

Set the bowl aside for a minute and combine the breadcrumb coating ingredients together on a plate. Now, scoop about ¼ cup of the chicken mixture and gently flatten it into a patty, drop it in the breadcrumb mixture and coat both sides. Now place it on the oiled sheet tray. Repeat until all the mixture is used. Now, drizzle or spray the olive oil over top. Pop in the oven for about 10-15 minutes, then flip and cook for another 10 minutes. The croquettes should be nice and golden.
