Sesame Cucumber Salad

A crisp pile of thinly sliced cucumber is always welcome in my bowl. I love it paired with slow cooked, slightly sweet meat served over rice. The combo just works and you know what they say, if it ain’t broke...


Ingredients:

1 english cucumber or 4 small cucumbers

1 tablespoon rice wine vinegar

½ tablespoon toasted sesame oil

a pinch of salt

a sprinkling of sesame seeds


Directions:

Toss all of the ingredients in a bowl and serve! Best served nice and chilled so store it in the fridge until serving.
