Chicken Caesar Sandwich
There was a time during college that I survived on little more than cereal, Tropical Smoothie chicken caesar wraps, and Coldstone Ice Cream. Needless to say, I wasn’t the healthiest :) My taste for a good chicken caesar has never faded and I find myself making them often in the warmer months. The problem, is that a salad for dinner isn’t exactly my family’s idea of a full meal (and honestly, I find myself hungry a short time after too!). Solution: make it a sandwich! Whenever there is a tough sell to a family dinner, it can usually be made more desirable by adding a bun. These toasted bread mimics the croutons, the crispiness of the lettuce, the creaminess of the dressing, the protein and char of the grilled chicken, it’s all still there in handheld form and it’s delightful!
Ingredients:
Makes 4 servings
Grilled Chicken:
1 pound chicken breast
1 tablespoon olive oil
juice from 1 lemon
1 teaspoon salt
1 teaspoon italian seasoning
½ teaspoon garlic powder
fresh pepper to taste
Caesar Dressing:
1 garlic clove, grated
juice of 1 lemon
1 teaspoon caper, finely chopped
1 tablespoon red wine vinegar
2 tablespoons olive oil
2 tablespoons greek yogurt
¼ cup freshly grated parmesan
salt and pepper to taste
Sandwich Assembly:
buns, toasted with butter
a handful of chopped romaine lettuce
freshly grated parmesan
cherry tomatoes (optional!)
Directions:
First, marinate your chicken breasts in the olive oil, lemon juice, salt, italian seasoning, garlic powder, and pepper. Let them sit at room temperature for about an hour or in the fridge for up to 24 hours. Before cooking, let them come to room temperature for an hour or so.
Mix your dressing in a small bowl or jar and have it ready to toss the sandwich ingredients in.
Fire up your grill to medium high heat and grill the chicken breasts for about 6-8 minutes per side depending on thickness. You could also cook them on the stovetop if you don’t have a grill.
Set them aside and toast your buttered buns on the grill (or pan).
In a small bowl, toss the chopped romaine and cherry tomatoes with some of the caesar dressing and grate some more parmesan over top. Spread a bit of the dressing over the toasted bun and layer it with a grilled chicken breast and a handful of the salad mixture. Squish the other half of the bun on top and enjoy!
