Carrot Slaw

A bowl of meat and rice needs a bright, crunchy side to liven things up a bit. This carrot slaw has the added benefit of being chock full of good fiber and vitamins that is only made better by the addition of a bit of sweetness from the maple syrup and tartness of the rice vinegar and lime juice. I have a hard time not scooping it out of the bowl by the spoonful before dinner’s even begun!


Ingredients:

Makes 8 small servings or 4 large.

6 carrots, peeled and grated with a box grater

4 green onions, thinly sliced

juice of 1 lime

1 teaspoon toasted sesame oil

1 tablespoon coconut aminos

1 tablespoon maple syrup

1 tablespoon rice vinegar

a pinch of salt to taste


Directions:

In a small bowl, mix all of the ingredients together with a fork or your hands. Taste for seasoning and add whatever you feel like it needs to balance out. Eat immediately and enjoy!
