Double Chocolate Olive Oil Brownies
You genuinely can’t go wrong with a pan of brownies. They will always get eaten and they add a little bit of magic to ordinary days. Even just the smell of brownies baking is enough to make you feel lighter on your feet when you’re feeling a bit bogged down by the demands of life. I have another go-to brownie recipe that’s a frequent family favorite, but it requires melting chocolate and butter together which can feel like one step too many on those days, the days you feel like your head is barely above water. Ingredients:
2 eggs
½ cup sugar
½ cup brown sugar
1 teaspoon vanilla
½ cup good quality olive oil
¾ cup cocoa powder or cacao powder (either will work!)
½ cup flour
½ teaspoon salt
¼ cup bittersweet chocolate chips
Directions:
Preheat your oven to 325 degrees and line an 8x8 baking pan with parchment paper. I like to take a square of paper and cut a few inches into each corner so they will nestle into the corners of the baking pan. This will make the brownies so much easier to remove once cooled. In a large bowl, whisk the eggs together with the two types of sugar. Whisk until your arms are tired and then keep whisking! You want it to be frothy, lemony yellow and when you pick the whisk up it leaves a ribbon of whipped sugar on top before it sinks in. Add the vanilla and olive oil and whisk until combined. Add the cocoa powder and whisk well again. Finally, add the flour and salt and switch to a rubber spatula or wooden spoon to mix until just combined, maybe 20-30 stirs. Pour the batter into the lined baking pan and smooth until evenly distributed. Sprinkle the chocolate chips over top and then a bit of the flaky sea salt to finish. Pop it in the oven for 25 minutes. You don’t want to over cook these! They may still seem a bit underdone in the middle, but they’ll set as they cool. Let them cool completely before picking up out of the pan and cutting into squares.
