S&P Sweet Potato Wedges

Lately, I've been craving sweet potatoes in every form. I’ve been making them as a side for every dinner and picking the burnt ends off the pan while plating up dinner. Carbs like sweet potatoes are CHOCKED full of nutrients and energy. They are so much more satisfying than the same calorie amount of chips or even bread. If you are looking for a way to lower your grocery bill, look no further than the humble sweet potato. These wedges are tossed in olive oil and sprinkled with salt and pepper for simple perfection.


Ingredients:

Makes 8 servings.

3 large or 4 medium sweet potatoes, cut into wedges

2 tablespoons olive oil

1 teaspoon salt

fresh pepper to taste


Directions:

Preheat your oven to 425 degrees F. If you have a convection oven, turn the convection fan on. This helps the sweet potatoes to crisp up instead of getting soggy. Line a baking sheet with parchment paper and toss the sweet potato wedges with the olive oil, salt and pepper right on the pan to save a bowl. Spread them out in an even layer and pop them in the oven for about 30 minutes or until nice and golden crisp! Enjoy!
