Broccoli Slaw
I love a crunchy, creamy counterpart to a slow cooked meat. The bags of pre-shredded organic slaw are the answer to making the simplest, most low effort slaw possible. I had to buy the broccoli slaw instead of cabbage since it was sold out and what a happy mistake that was. A quick mix of mayo, greek yogurt, a bit of sugar for sweetness, a dash of dijon for brightness, salt and pepper and BOOM, an instant elevation of BBQ sandwiches. Feel free to mix the veggies up depending on what you have on hand!
Ingredients:
Makes 8 servings.
1 bag of broccoli slaw (about 4 cups)
2 tablespoons greek yogurt
2 tablespoons mayo (this is my favorite)
1 tablespoon sugar
1 tablespoon apple cider vinegar
1 teaspoon dijon mustard
salt and pepper to taste
Directions:
In a large bowl, combine all of the ingredients except the broccoli slaw. Add a bit of salt and pepper, but you can always add more at the end. Dump the broccoli slaw into the dressing and toss it together. Taste for seasoning and adjust as you see fit. I like a sweet and tangy coleslaw personally, so I usually add a bit more sugar and apple cider vinegar. It stores well in the fridge and the broccoli holds it’s crunch for days!
