The Crispest Roast Potatoes
The most delicious food, truly is the simplest.Most often that not, when I’m getting dinner going for the night I make these simple roast potatoes that are magically transformed in the oven into little golden nuggets of deliciousness. They are the perfect accompaniment to any meat!
Ingredients:
Makes 4 servings
1 pound baby yellow potatoes, halved
2 tablespoons olive oil
salt and pepper
Preheat your oven to 400 degrees F and grab a large baking sheet. For once, we are NOT lining the sheet with parchment. The contact with the metal is what gives the cut side of these potatoes the crispiest exterior. Pour the olive oil onto the parchment and toss the potatoes in the oil on the pan. Spread them out and put them cut side down so they can get nice and crispy. Sprinkle with salt and pepper and put the pan in the oven and set a timer for 40 minutes. Chekc them around this time. The bottoms should be golden brown and crisp with the creamiest insides!
