Beef Gyros
I’ve long proclaimed my love for a meat, pita, and yogurt sauce dinner combo. If I had my way we would eat it every third day all year long, alternated with soup and a roast with baked sweet potatoes. Maybe that’s why you see riffs on those lovely types of recipes so often in these pages. These gyro-like wraps are as simple as making tacos, but with a slightly different flavor profile to mix things up a bit. The meat is spiced with cumin and cinnamon, the “sour cream” is replaced with tangy yogurt sauce, and the salsa gets replaced with a crisp, cool cucumber salad. If you want to really hit the easy button, use regular flour tortillas for wrapping it all up! If you have a spare twenty minutes, you won’t regret rolling out the homemade naan, I promise!
Ingredients:
2 pounds ground beef
2 teaspoons oregano
2 teaspoons cumin
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon onion powder
½ teaspoon cinnamon
Cucumber Salad
4 cucumbers, thinly sliced
1 red onion, thinly sliced
1 cup cherry tomatoes, quartered
1 tablespoon olive oil
1 tablespoon red wine vinegar
½ teaspoon dried oregano
salt to taste
Lemony Yogurt Sauce
1 cup greek yogurt
juice from 1 lemon
1 clove garlic, grated
salt to taste
Directions:
Heat a wide pan over medium heat. Add the ground beef with all of the gyro seasonings. Use a wooden spoon to break it into pieces as it cooks and browns (like taco beef). While that’s doing its thing, toss your cucumber salad together by mixing all of the ingredients in a bowl. Same goes for the yogurt sauce, just a quick mix and stir and you’re ready to go! We love to serve this dinner family style and let everyone make their own wrap to their tastes. This is so great as leftovers, the meat reheats so well on the stove and the sides are all just as good the next day!
P.S. you can add any of your favorite Mediterranean ingredients like hummus, olives, feta, etc.
