Tomato Cucumber Salad
The perfect side to serve with grilled meats all summer long, but also a surprisingly refreshing counterpart to slow cooked meats. The cucumbers are so crisp and fresh, the vinegar brings the tang to brighten everything up, the onions are just sharp enough to wake your taste buds up, and the tomatoes are earthily sweet. Its a masterclass in simplicity at it’s finest.
Ingredients:
4 cucumbers, thinly sliced
1 red onion, thinly sliced
1 cup cherry tomatoes, quartered
1 tablespoon olive oil
1 tablespoon red wine vinegar
½ teaspoon dried oregano
salt to taste
Directions:
Toss the cucumber salad together by mixing all of the ingredients in a bowl. It will store well in the fridge for a few days!
P.S. you can add any of your favorite Mediterranean ingredients like hummus, olives, feta, etc.
