Jeweled Rice Pilaf

Pilaf is really just rice dressed up to go out on the town, fancy rice if you will. Just because it’s fancy, doesn’t mean it’s complicated. It is really just rice cooked in the normal way (with broth for extra nutrients, of course) with some humble ingredients mixed in to create something bigger than the sum of it’s parts. If there is an ingredient you don’t have or aren’t fond of, don’t be afraid to swap it out for a similar ingredient or leave it out altogether. Pilaf may be fancy, but she’s down to go with the flow.


Ingredients:

1 cup white basmati rice

1 cup water

1 cup bone broth

a handful of chopped fresh herbs like parsley or cilantro

1/4 cup dried apricots, chopped small

1/4 cup sprouted almonds (or regular almonds)

zest of 1/2 an orange

1/2 teaspoon salt

1 tablespoon butter

a dash each of cinnamon, cumin, and coriander


Directions:

In a small pot, add the rice, water and broth. Add the lid and bring to a boil. Turn the temperature down to the lowest heat and leave the lid on. Let the rice sit for about 20 minutes at low. Toss the rice with a fork and add the rest of the ingredients. Boom, fancy pants rice is ready for dinner. This is equally good at room temperature so don’t feel pressured to serve immediately.
