Kielbasa Sausage & Honey Balsamic Cabbage
We all need more recipes like this guy. Scatter a bunch of simple ingredients on a sheet tray, pop it in the oven, and have dinner ready to go 30 minutes later. If your kiddos are cabbage averse, you can sub for sweet potatoes, butternut squash, or zucchini. On the other hand, they can just eat sausage and brothy rice for dinner and they are still getting a nutritious, filling meal! Remember, picky eating is a stage! Family dinner should be a time to come together and enjoy each other’s company not argue over whether they like cabbage or not. Encourage trying new foods, but also keep a positive atmosphere around mealtime and it will go a long way to eliminating meal time stress.
Ingredients:
Enough kielbasa to feed your family, we typically get a 12 ounce link for one meal and double that for leftovers (our favorite beef kielbasa is from Teton Waters Ranch which we get at Costco and Whole Foods!)
1/2 purple cabbage (or whatever kind you have on hand!)
1-2 tablespoons balsamic vinegar
1-2 tablespoons honey
salt and pepper to taste
Directions:
Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper. Slice the kielbasa into 3-4 inch sections and the cabbage into thin wedges. Place them on the baking sheet, wedging the sausages in among the cabbage so it will imbue flavor as it cooks. Drizzle the balsamic and honey over top evenly and sprinkle with salt and pepper. Pop in the oven for about 30-40 minutes, until the sausage is sizzling and the cabbage is browned on the edges. Serve with rolls or rice and enjoy!
