Cucumber Avo Salad
A scoop of this crispy creamy combo of cucumber and avocado makes any bowl dinner better. A pile of rice and some cooked protein sings when treated with a little TLC. It doesn’t store in the fridge well, but it’s so easy to put together that making it fresh is no trouble!
Ingredients:
Makes 4 servings
1 english cucumber, quartered longways and sliced in ½ inch pieces
1 avocado, diced
2 tablespoons greek yogurt
juice of 1 lime
finely chopped chives
salt to taste
Directions:
Just add all of the salad ingredients to a medium bowl and toss gently until combined!
