Breakfast Popsicles
Ok, we don’t actually eat these for breakfast, but I wanted to make clear that you could eat them for breakfast if you wanted to! A breakfast dish implies wholesomeness, a balance of all the good stuff, and something that could sustain you for a few hours. These popsicles hit all those marks. Even if we don’t actually eat them for breakfast, we do regularly eat them as a morning snack in these hot end of summer days while we read stacks of books on the porch. There’s no wrong or right way to make or eat these so please, use what you have, eat when you’d like, and enjoy these last fleeting days of summer!
Ingredients:
3 cups frozen fruit (our favorite combo is 2 cups of mango and 1 cup of pineapple, but 3 cups of strawberry is a close second)
1 cup of greek yogurt
2 cups of milk
1 teaspoon vanilla extract
⅓ cup sugar
Directions:
Combine all of the ingredients in a high speed blender and blend until totally smooth. Pour the mixture into popsicles molds. I use some old silicone ones from Amazon, but you can use what you have! Let them freeze for at least 8-12 hours before removing from the mold. If you find it difficult to remove, run some warm water over the bottom of the mold (but don’t let the water get inside!) and slowly push them out. Store in a tupperware in the fridge and relish in the knowledge that a delicious porch breakfast (or a morning snack) is just a freezer door away.
