Greek Salad
This salad can be remixed in so many ways, but it’s delicious no matter what you serve it with. It’s truly at home in a smorgasbord summertime dinner where everyone dishes up their own perfect plates.
Ingredients:
Makes 8 servings
1 pint cherry tomatoes, halved
2 English cucumbers, sliced
1 small red onion, thinly sliced
1 tablespoon red wine vinegar
2 tablespoons olive oil
½ teaspoon salt
2 tablespoons fresh oregano, chopped finely
Directions:
In a large bowl, combine all of the ingredients for the greek salad and toss to coat with the dressing. Set it aside to let the flavors mingle for about 15 minutes. This stores well in the fridge for up to 3 days!
