Garlic & Herb Flank Steak
Is there anything better than a sizzling steak, sprinkled with flaky salt and sliced thinly? It’s one of those simple dishes that requires so few ingredients, but is so very memorable. When our kids were just little babies, my husband and I would tuck them in and have an at home date night. We had no family nearby and babysitters cost more than we could reasonably afford so we’d buy the cheapest grass fed steak we could find, whip up a caesar salad, and make some baked potatoes. We ate like kings and enjoyed our kid free steak house dinner in the comfort of our home. Nowadays, our bedtime isn’t too much later than our big kids, but luckily they enjoy a good steakhouse at home dinner as much as we do!
Ingredients:
Makes 4 servings
1 pound flank steak
1 teaspoon coconut sugar
1 tablespoon olive oil
1 teaspoon apple cider vinegar
1 teaspoon salt
fresh pepper
2 tablespoons fresh thyme
1 garlic clove, grated
Directions:
In a large bowl mix all of the marinade ingredients and rub over the steak. Cover it and put in the fridge for 8-24 hours. If you can only do it for 30 minutes, that’s ok too! Let the steak come to room temperature for about 30 minutes to 1 hour before cooking. When you’re ready to eat, preheat the grill to medium high heat. Cook the steak for about 5-6 minutes per side. You don’t want to overcook any steak, but especially a flank steak since it’s so lean. Let it rest for about 5 minutes before slicing thinly against the grain. Enjoy your steakhouse dinner!
