Blueberry Mint Lemonade

I love having a homemade, mineral rich, and hydrating beverage in the fridge all summer long. And with the sweltering temperatures we've been having, lemonade just seems right. We also love blueberry picking in July and always come home with about 2 tons more blueberries than we could ever eat before they go bad. So I’m always looking for ways to savor them when the thrill of simply eating them out of hand gets a bit humdrum. Blueberry lemonade was a happy discovery when I had a sad bowl of blueberries on the edge and needed to use them right then and there. It’s tart and sweet in just the right balance and keeps you coming back for another sip!


Ingredients:

3 cups water

½ cup blueberries (frozen is fine!)

⅓ cup sugar

10 mint leaves

¾ cup lemon juice (about 6 lemons depending on how juicy they are ;)


Directions:

Put all ingredients in a high powered blender and blend until combined. Pour into jars and store in the fridge. I love mine poured over ice and topped up with sparkling water as an afternoon pick me up!
