Chocolate Chunk Blondies
We love a good cookout spread. Summer is prime time for inviting friends over in a low stress environment. No worries about cleaning the house because we’ll be out in the backyard most of the time anyways! No worries about a complicated meal, just throw some chicken, burgers, and hot dogs on the grill! Set out some watermelon and a simple salad with a bowl of potato salad and you’re good to go. I want dessert to be similarly delicious, but low stress. These blondies fit the bill perfectly. I have to warn you that at the first bite, you will be shocked at how delicious they are with such little effort. There is some magic when you mix butter, brown sugar, and lots of vanilla and bake until just barely cooked through. Add some roughly chopped chocolate and a sprinkle of salt and oh boy, your meal just became more memorable.
Ingredients:
½ cup butter, melted
1 cup brown sugar
2 eggs
1 tablespoon vanilla
¼ teaspoon baking powder
½ teaspoon salt
1 cup flour
6 ounces roughly chopped dark chocolate bars
a pinch of salt over top
Directions:
Preheat your oven to 350 degrees F. Butter an 8x8 baking dish and then line it with a square of parchment with about 2 inch slits in the corners so it fits perfectly. In a large bowl, whisk the melted butter and brown sugar. Add the eggs and vanilla and whisk well. Add the flour, baking powder, and salt and mix just until combined. Fold in the chopped chocolate bar and pour into the baking dish. Sprinkle the top with flaky sea salt and pop in the oven for about 25 minutes. You want the edges to be golden and the middle to be just set. Try not to over bake it for the best texture! Let them cool and use the parchment to pull it out of the pan. Cut into small squares. Enjoy!
