Snickerdoodles

I always imagined myself greeting my children after school with a warm cookie and a glass of cold milk. I just felt that this small gesture was the perfect way to say, “I missed you today!” and take the time to catch up on their day. Now that I have elementary aged children, we’ve chosen the path of homeschooling which is lovely and rewarding, but there’s never a separation! There’s never that beautiful moment of reunion because quite honestly we are together all day every day which is beautiful in its own way. I’ve decided we can just make the cookies together and wash dishes together while they bake and sit and enjoy them together while sitting on the porch watching wind blow in the trees. However you choose to cookie and milk, I hope these sweet and tangy snickerdoodles bring you joy!


Ingredients:

1/2 cup butter, room temperature

3/4 cup sugar

1 egg

1 teaspoon vanilla

1 1/2 cups flour

1 teaspoon cream of tartar

1/4 teaspoon baking soda

(or you can replace both the cream of tartar and baking soda with 1 ½ teaspoon of baking soda)

1/4 teaspoon salt

Rolling mixture:

1/4 cup sugar

1 tablespoon cinnamon


Directions:

Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper. In a large bowl or stand mixer, mix the butter and sugar together until well mixed and light yellow in color. You can definitely use a sturdy hand whisk for this is you have no mixer! Add the egg and vanilla and mix until well incorporated. Add the flour, cream of tartar, baking soda, and salt and mix in with a wooden spoon or stand mixer on low speed. The flour will go flying if the speed is too high! Then mix the cinnamon and sugar together on a plate and set aside. Use a tablespoon scoop or spoon to roll balls of dough into a golf ball sized shape and then roll them in the cinnamon sugar mixture. Place them on the baking sheet and use your four fingers to gently flatten the ball down. Bake for about 11 -12 minutes. The edges will just turn golden. Let them cool on the pan for a bit before storing in an airtight container. Enjoy!
