Grapple Gummies

As a mom of young children, I have a steady stream of muffins, chocolate mineral milk, and gummies going through my kitchen at all times. I have a love-hate relationship with snacks. Personally, I prefer to have large, balanced meals that fill me up until the next mealtime. I find it easier to fit protein, carbs, fiber, and micronutrients into a solid, warm meal. On the other hand, I understand that children have incredibly high energy needs. As long as my kids are finishing their three main meals full of goodness, I don’t mind having some solid balanced snacks on hand. These gummies fit that requirement. They have mineral rich carbohydrates from the maple syrup and juice; as well as protein and gut nourishing glycine from the gelatin. They gobble them down and go on their merry way and I feel pretty chuffed that they are getting all that goodness!

Ingredients:

4 cups grape juice

1/4 cup maple syrup

splash of vanilla

1/2 cup gelatin powder

Directions:

Pour the grape juice, vanilla extract, and maple syrup into a wide skillet. Slowly sprinkle the gelatin over top in an even layer. Let it sit to absorb in the liquid, about 5 minutes. This is called blooming the gelatin. Once it’s bloomed, turn the heat on medium low and let the mixture warm up. Use a whisk to slowly mix without making too many bubbles. While it’s warming, coat an 8x8 dish with coconut oil to keep the gummies from sticking. When the mixture is just coming to a simmer, give it one final stir and pour into the coated dish. Pop it in the fridge for at least 4 hours until set and cut into cubes. Enjoy!
